Instructions

1. In a large pot, bring water to a boil and cook the egg noodles as specified in the package instructions. Drain and set aside.

2. Warm the vegetable oil in a big frying pan over medium-high heat. Put in the prawns and sprinkle with salt and pepper. Sauté for 2-3 minutes until they just begin to show hints of their final color.

3. Put the peeled and diced garlic in the skillet with the prawns and sauté for another minute until it smells good but isn’t brown.

4. Take the prawns out of the skillet and put them aside.

5. Using the same skillet, melt the unsalted butter over medium heat. Stir in oyster sauce, soy sauce, fish sauce, sesame oil, and sugar. Cook for 1-2 minutes until the sauce is well blended and slightly thickened.

6. Add the sautéed noodles to the skillet and toss them in the sauce to coat evenly.

7. Place the cooked prawns back into the skillet with the noodles. If you are using them, now is the time to sprinkle the chili flakes over the whole mixture.

8. Add the chopped green onions and toss everything together until well combined and heated through.

9. Sample the prawns with garlic noodles and make sure the seasoning is to your liking, adding salt, pepper, or chili flakes to amp up the flavor if necessary.

10. Immediately serve the dish with lime wedges on the side for squeezing on top right before eating.
